Corona Cooking Challenge

Stewed apples 

I tried the recipe and the apples turned out very tasty. My next door neighbor dropped off a bag of granny smith apples and oranges. They're like that with us....love them. Immediately I took an orange and squeezed it and added the juice to the pitcher of fresh brewed ice tea with lemon. You got to use one a day to enjoy them at their peak. Keep it fresh.
Apples keep and but now I have plenty. I have enough to have to do something about it. I looked in the old cook book for something simple and found stewed apples. I looked at a few more online and found that what I had on hand matched the recipe. It's easy but prepping the apples are time consuming. You got to develop a rhythm to the slicing and peeling. It's worth it.
I didn't have a corer of peeler. I quartered the apple to remove the core. I eighth the apple to remove the skin. This produces a lot of garbage. (There's more than one way to skin a cat...an apple.)
The apple wedges get placed in a large skillet with cover. Add 1/2 cup water with 1/2 tsp of vanilla extract, 1/4 cup brown/Lt brown sugar and lightly and carefully sprinkle with cinnamon.
Cover skillet and turn heat on high for five minutes. They cook up fast. Turn heat off. Can you smell it?        #coronaart
It's like apple pie without the crust
Even made an omelet for the morning microwave along with chilled stewed apples
